How to prove my SEO capabilities?
Created a very niche website during High School with a team of 8 people. I was the founder and responsible for SEO. We consistently get (an estimated) 60-70% of our total market to our website every month.
We only rank for the specific niche keywords that are necessary for the website's purpose - selling a very niche product.
The website itself is going great. However, if one doesn't know the target market, one wouldn't think that it's going great. We get a meager ~10,000 users per month (which is a lot in our niche, but not much for 'any' website). We have a very low Domain Authority ~12 DA (as it simply wasn't needed). The only backlinks we have come from website with whom we cooperate or who like our content (since its a small niche, there is only a small number of websites).
Nonetheless, I have 'some' knowledge (I would say advanced) knowledge about on-page SEO and some basic knowledge about technical and off-page SEO. I've also worked with all the 'bigger' SEO tools that are available.
I'm currently in college and I'm looking for a remote, part-time SEO position. However, all the companies I apply to see somebody with 'no experience'. I would really appreciate the money and 'stability' that would come with an actual job instead of creating another website by myself.
I know that this might sound like I am some sort of scammer who read two articles and now thinks that he is the king, however, I have done a lot of reading - books, articles, courses, google's guidelines, etc. and I also had some really promising meetings with digital marketing teams and CEO's of other companies that were looking to hire me. I even had two offers on the table with really high pay $50+/hr. Unfortunately, they were both requiring a full-time position, which during college I'm simply unable to do so I declined. I'm doing well in all the questions and assessments that potential employers give me, however, I always fail at the 'experience' part.
My question: What certificates (or similar) can I easily acquire (easy in the sense of not time consuming) with my current skillset? What other ways are there in my situation to show that I am not a complete idiot so I can at least make it to the interview?

PS: I'm not even looking for high paying jobs anymore. A 25-30/hr position would be adequate already :)
PS2: I realize how obnoxious I sound. But this really bugs me because I know that I am good enough, but I just can't prove it and it just hurts my soul.
