Manual schema markup in wordpress?

Hey there,

I really dislike all the schema plugins out there, so I want to manually place schema markup on my site, issue is, it's a huge site.

So, I was wondering if i can place a schema markup with blank values for each post-type (I'm using Elementor), and place short-codes to fill up the values of the schema markup with each individual's page's data.

How can I do it? I don't have much experience with short-codes, and I haven't been able to find any documentation of this kind of prosses..
