Too much text on website??

So how do you all deal with clients who want extremely minimal text on their website? I own a marketing agency where one of the things we do is build websites and I work with awesome copywriters, but sometimes I get clients who want a website with next to no text.

Google loves text on the pages as long as its educational, relevant, and flows naturally. Most clients have no problem with having About pages that explain their mission statement, their company history and a little bit more about the company. They have no issue with having 500-1,000 words per service page. They have no problem with anywhere from 500 words to 1,000+ words per blog post.

But then there's other clients who want bare minimum. They want more images than words on the website (slight exaggeration). They'll even get feedback from other people saying the same thing. If there's too many words the person giving feedback says they'd leave the website.

However, from my own perspective, I'm not going to be a customer/client/patient of a business who doesn't educate me on what they do, explain who they are and why I should choose them, and show me that they know what they're talking about. It's easy to slap some words on a few pages with some images and a logo can call it a website, but that isn't enough for me when spending my money.

How do you all handle these types of clients who want next to no text on their websites? I don't feel they leave room to convert visitors into paying customers/clients/patients. They don't leave room to help their SEO.

For the record, I DO understand when you've overwhelmed visitors with content and have way too much. I also understand the need to break up text on a page or article with images and other design features. This is specifically talking about next to no content versus a reasonable amount of content.

Am I in the right here to try and push for a website "filled" with content? My goal is to always have educational, relevant content, that flows naturally in a way that the search engines will like them and it will hopefully create more revenue for the client which can in turn create more revenue for my business.
