Overlapping services between clients in same region?

So I've got an injury attorney as a prospective client.

And another prospect who does criminal defense, family law, and injury.

So... They're in the same city. Do I have clients pay for each category of business? Or do I take only one client even though I'm not helping someone in that area with family law yet?

This is why I get confused with niche seo businesses. Like how are you an attorney seo specialist? There's only 10 spots on page one yo.
