Old domains 301-redirect to new domain since many years ago, but still indexed in Google?

I have been dealing with this situation since a few years ago... periodically I check the situation to see if anything changes, apparently without success.

I wonder if I'm missing something fundamental...

I have a website on a domain, which is working well and ranking as desired.

5-6 years ago, the same website used to be on a different domain. Plus, some domain aliases where 301-redirectin to the (at the time) main one. Now, the old aliases and the old domain are all 301-redirecting to the new one.

After so long, many URLs from the old domains are still indexed on Google... while I expected to be none.

In the same GSC, I verified all the domain properties (not the URL prefixed ones) for:
- the "new" domain
- the three "old" domains

Everything is verified. I remember that in the old GSC I correctly did the domain transfers procedures. All the 301 from the old domain and old aliases are verified and their http status code is correct

Anyone can give some clarification on the process?
