Google displaying incorrect, future date on blog post

Hi! Ive got a blog that ranks first page for my targeted keywords. The date it was published was 10th August 2021 (for the meta info, the date is written as 2021-08-10). Google however has displayed this within search as being published 8th October 2021.

My question is, if i change this date within the code to say, 8th August (thus negating the month/day order) would Google then move the rank position - could this affect the SEO? I could change it, but risk the rank position moving, or leave it and risk people not clicking on it because its clearly not October.
