Category page vs static page in Wordpress - what do you prefer (from an SEO perspective!)

Hello

I have a blog where I want to rank for the wide search term "vanlife" and also create more specific content around that topic, for example "vanlife in vinter", "vanlife with a dog" and so on...

Right now I have it as a category page on my website but I'm not able to add more than a few lines of text before it looks bad. Should I reconsider to create a static page about vanlife instead with h2:s about "vanlife in vinter" etc? What is best from an SEO perspective?
