Submitted 500+ pages in as Sitemaps.xml to Google (which it acknowledges, weeks ago!) but Google Search Console only shows 23 in the "Coverage" area - what gives?

I have a Wordpress site with a few key sitemaps (generated by Yoast) submitted to Google Search Console. Right now there are about 1200 valid pages described by those XML files, however the Coverage section only shows 23 "valid URLs", most of which are a month old (and now outdated). It's as it Google is ignoring the sitemaps I've submitted (three weeks ago at launch).
Further confusing matters is that most of the pages described in those XML sitemaps are discoverable using a search on Google. That said, the number of click throughs on all the well-structured content (Title & Excerpt/Description) is much lower than expected.
What gives? It seems as though Google Search Console is operating on information from months ago.
Perhaps relevant is the fact that the site was switched from a different server (with different content) three weeks ago, however, 301 redirects are in place for any valuable old Google-cached links.
