Questions on repurposing large, pillar posts

Hi all - I have a question on re-using the text from large pillar posts (3000+ words).

Let's suppose I've written a post on apples talking about red, pink, green apples and how to grow them and cook them.

Can I then create 3 smaller articles targeted at red, pink, and green apples using the pillar post's text?

How does Google judge the re-use of text between articles of the same website?

Any advice on this will be greatly appreciated. Thank you!
